Filipinos have *a lot* of comfort foods. If you think back to your childhood, it's hard to remember all your favorite meals and merienda, but we guarantee, you have at least one heartwarming memory involving sopas. A bowl of sopas is hard to beat, especially on a particularly crappy day.
Toni Gonzaga teaches us her go-to sopas recipe—with a twist! Unlike a traditional bowl, Toni likes to cook hers with a nakakasayang amount of cheese, haha.
Ingredients:
- 2 cups of macaroni pasta
- 1 1/2 cups of cheese
- 1 small onion, diced
- 1 carrot, diced
- 1/2 cabbage or broccoli, chopped
- 18 oz. evaporated milk
- 1 piece of hotdog, sliced
- Chopped celery
- 3 tbsps vegetable oil
- 1 1/2 tbsp patis
- 4 cloves of garlic, chopped
- 1 cube of chicken broth
- 6 to 8 cups of water
Directions:
- In a large pot, heat up the vegetable oil before adding the garlic. Wait until it's golden brown before combining the the onions, carrots, celery, and hotdog. Toni says you can also use ground beef instead of hotdogs.
- Next, mix in six to eight cups of water then add the chopped broccoli. If, however, you choose to use cabbage, you'd add it towards the end instead.
- Throw the pasta in followed by the patis and cubed broth. Cover the pot and let it boil for 10 minutes. Stir every once in a while.
- Once the pasta is ready, add the star ingredient: evaporated milk. Cover the pot again and let it cook for three minutes.
- Turn the heat off before adding all the cheese your heart desires. Let it melt before serving.
